Beautiful and delicate ruby-red color. Intense and elegant nose, with predominance of strawberry and flowery notes, that together make this Pinot Noir a very lively, harmonious and generour wine. On the palate it is clean, well balanced, with soft rounded tannins and a good level of acidity. The wine is long in the mouth and shows well-integrated, balanced oak. The wine is very lightly filtered, making the aromas and color very expressive of Pinot Noir.

Seared Grouper with Roasted Endives – Montes Alpha Pinot Noir

300g 石斑鱼 / 300 g Grouper
3个菊苣 / 3 Endives
1个红卷心菜 / 1 Red Cabbage
10 cl淡奶油 / 10 cl Cream
2 g孜然 / 2 g Cumin
精盐若干 / Fine Salt
白胡椒若干 / Ground White Pepper

PREPARATION

将鱼去皮后放置在抹上油的烤盘上。
将烤箱温度设定在110℃,烤3小时,直到鱼皮变得脆。
Remove the skin from the fish and place it on a greased baking sheet.
Bake in a 110°C oven for 3 hours or until crisp.

将石斑鱼在烤架上烤3分钟。撒上盐和胡椒调味。
Cook the grouper on a grill for 3 minutes. Season with salt and pepper.

切半个菊苣,放在烤板上,并在烤箱内烤上15分钟。将卷心菜切成丝,放入沸水中,以便去皮。
Cut the endives in half, place them on a baking sheet, and roast in the oven for 15 minutes.
Slice the cabbage into julienne and blanche in boiling water.
